The opening shot to "Half Blood Prince" was pretty amazing, and took many weeks to produce that single "wow" moment ... the original "Jaws" was pretty good as well, as well as Mission Impossible 3, (with he and his wife strapped to the chairs for interrodation, and his "wife" being ... (spoiler).

Jaws crossd my mind also as did Last of the Mohicans.
Days up and down they come, like rain on a conga drum, forget most, remember some, don't turn none away.   Townes Van Zandt

This may sound overly simple but the snow on the 20th Century Fox thing for Edward Scissorhands..I thought that was cool

I know that nobody will agree, but I've always thought of, 'Scream', as having an excellent opening scene...yep, 'Scream'.

I also really thought it helped propel the new generation of horror/suspense movies.

I was going to mention Scream too...probably my favorite opening sequence from any horror film. Jaws and The Shining were great too.

Best scene in the movie...and it wasn't a bad movie, just a really good scene.

I kinda liked the beginning of The Program where in the mud and rain the Able Cain threw the ball while being sacked to a young Wes Welker, who dropped it.  :'(  :-*

Opening to...
(* are for movies that aren't even that good)

Magnolia
*Saving Private Ryan
The Player
*Dawn Of The Dead
*The Wedding Planner (yup, I said it)
Return of the Jedi
Up
Miller's Crossing
*Super Troopers
Reservoir Dogs

best of all time?  The Graduate, which might well be the greatest movie ever made.  "I've just got one word for you: Plastics."

Some great ones mentioned.  The remake of Dawn of the Dead with Johnny Cash's "The Man Comes Around" as the backdrop still gives me goosebumps.  Perfect opening scene / credits.

On the zombie theme 28 Weeks Later (or was it days>) with the guy running through the field and the super intense music was pretty awesome.

Probably the one that got me the most fired up though was the opening montage for Rocky 3 with "Eye of the Tiger" ...I mean COME ON!  At the time there really was nothing to get you more pumped up than Rocky getting bad mouthed by Clubber Lang!

I thought about this a little, and I have to go with Saving Private Ryan.

The Bond Movies really put a lot into their openings. You dont want to be late to a Bond movie.

If you were a Tolkien geek as a kid and loved everything Middle Earth, then the opening of "The Lord of the Rings: The Fellowship of the Ring" was easily one of the best moments in cinematic history and just crazy awesome.
