I understand Pierce has a weird option on his contract where only some of it is guaranteed next season. My question is would it be possible for Pierce to opt out and restructure his deal like he did the last time?

Basically, is there a player option provision in there as well?

No, I don't believe that he has a player option.

Darn... So basically, it's Pierce at $15 million next season or not at all.

Yes, Pierce could do that. It's a player option. It's his choice.

Pierce would probably want a two (three?) year deal to make it worthwhile for him. To make up some or all of the money he lost by opting out.

Oh, maybe wrong. Storytellerscontracts.com has Pierce down as both a player contract + partially guaranteed. Need a second source to confirm that. Shamsports just has Pierce down as non-guaranteed (no player option).

Hmm… Maybe as long as the first year of the contract equals out to what's guaranteed, the C’s could restructure his deal (Assuming, of course, Pierce agrees to opt out again for the years).

I think it would make sense for the Celtics to try to cut down that one year contract to free up some money and align him to expire with KG and Rondo. $11-12 million/per for 2 years would probably make sense for both parties.
